Ingredients

oz (170g)
butter
at room temperature
2
oz (60g)
soft icing sugar
2
oz (60g)
custard powder
4-6
oz (115g -170g)
plain flour

glace cherries
halved
Instructions
Pre-heat to 180° convection or 160° fan forced
With an electric beater, cream the butter and icing sugar until smooth.
Add the custard powder and mix for a further minute or two.
Add enough flour to form a dough able to hold its shape ( I generally use the entire 6oz of flour ). Mix until combined.
Roll into smooth balls (around the size of a small golf ball) and arrange on a large baking tray.
Flatten each ball with a fork and place half a glace cherry on each. Bake for 20 minutes.
Remove from the oven and leave on the tray for a minute or two before transferring to a wire rack to cool completely
