Spicy Ramen Noodle Salad is perfect on a hot Summers day. A refreshing, spicy and healthy cold noodle dish, suitable as a side or a main and a breeze to put together.
Spicy Ramen Noodle Salad
For The Dressing
Place all of the dressing ingredients in a small jar, shake well and set aside.
For The Salad
Cook the noodles in boiling water for four minutes. Drain and rinse under cold water.
In a medium sized bowl, toss the noodles with the carrot, ginger, coriander and most of the sesame seeds (reserve a few seeds to sprinkle on top as a garnish).
Pour over the dressing, toss to combine and serve.
The easiest way to toast black sesame seeds is to place them in a small pan with a few white sesame seeds over a low heat. Shake the pan regularly. When the white seeds are lightly golden, the black seeds will also be toasted.
