Place all of the dressing ingredients in a small screw top jar and shake well
Peel the carrots.
Create the ribbons with a standard vegetable peeler. Starting at the fat end, slice down the entire length of the carrot. Continue to peel as much of the carrots as possible.
Place the carrot ribbons, ginger slithers (if using) and coriander leaves into a medium sized mixing bowl. Pour over he dressing and toss well. Sprinkle with a few extra sesame seeds for garnish and serve.
